Having tried countless hummus recipes, this method has to be my favourite for producing the silkiest hummus in the least amount of time. Higher quality ingredients really do make a difference here so treat yourself to that expensive jar of chickpeas - your hummus will thank you.

Silky Hummus

1 x 570g Jar Chickpeas

4-5 tbsp Good quality tahini, 

1 Small garlic clove

Juice 1 lemon

Salt

  1. Tip out about half the liquid from the jar of chickpeas and set aside for later. Add the chickpeas with the remaining liquid to a blender along with the other ingredients and a big pinch of salt. Blend for a good 5 minutes until smooth.

  2. Taste the hummus for seasoning, adding more lemon, garlic or chickpea water to loosen.

  3. I like to serve it in a shallow bowl with lots of good quality olive oil and zataar, or you can keep in an airtight container in the fridge for 4-5 days.
