Serves 2:
100g white crab meat
1/2 bulb fennel
1/2 lemon, juice and zest
1/4 red chilli
fresh parsley
fresh bread
Crab and fennel toasts for those days when turning on the oven is simply not an option.
Crab & fennel toasts
Thinly slice the fennel and chilli, a mandolin is the best tool for this if you have one. Add to a bowl along with the lemon, parsley, lots of extra virgin olive oil, the crab meat, salt and black pepper. Taste for seasoning and acidity levels and adjust as needed.
Pile onto toasted bread, topping with fennel fronds if you have them.
